It's been awhile since I shared a recipe, but this one is too good (and too easy) to miss! It's my spinach artichoke chicken...a variation of something I saw on Pinterest that I tailored for me and LAS.
Chicken Breast
Canned Artichokes
Mushrooms (fresh or canned)
Spinach (fresh or frozen)
Onions
Garlic
Oregano
Garlic
Salt and Pepper
I season the chicken (btw, you could use chicken thighs too, which would likely be delish) with salt and pepper, garlic and oregano (I learned oregano is kind of strong when you aren't dumping it into pasta sauce so don't over do it.)
Here I topped with the artichokes, but you could lay the chicken on top of them as well. Then I added the mushrooms, spinach, and onions and cooked for about 45 minutes (these were large chicken breasts...so you may need to adjust)
I served with red potato wedges and salad. I love this because its a total kitchen sink recipe so use what ever veggies, etc. you have on hand. The original recipe called for diced tomatoes, so you can feel free to get creative.
